A creamy, curried chicken salad with Greek yogurt and warm spices over a bed of fresh greens.

- 3 lbs chicken breasts
- ¾ cups Greek yogurt
- ½ cups mayonnaise
- 2 tablespoons curry powder
- ½ teaspoons salt
- ½ teaspoons black pepper
- 2 whole gala apples, finely diced
- 1 whole red onion, thinly sliced
- 5 cups sweet potatoes, cubed and roasted
- 4 whole carrots, thinly sliced
- 4 stalks celery, thinly sliced
- 10 cups spinach
- 5 cups quinoa, cooked
Instructions

Cook chicken so it can be shredded (instant pot or slow cooker work well).

Once chicken is cooled, mix all ingredients together. Add more salt and pepper to taste if needed.

Top leafy greens with chicken salad and all remaining ingredients.
