- 1 clove garlic, minced
- ¾ cups olive oil
- ½ teaspoons sea salt
- ½ teaspoons ground black pepper
- 3 whole bell peppers
- 6 cups garbanzo beans, cooked

Whisk ingredients together until combined.

Preheat oven to 425 degrees Fahrenheit.

Slice bell peppers & toss in olive oil on a baking sheet.

Roast bell peppers for 25-30 mins.

Spread walnuts on a baking sheet & roast in oven for 5-7 mins.

Prepare bowls by adding roasted peppers, walnuts, quinoa, feta, Kalamata olives, cucumbers, and garbanzo beans. Drizzle with lemon dressing.
