A vibrant salad combining charred corn, fresh spinach, and creamy mayonnaise dressing with a kick of jalapeno and cayenne.

- 2 cups corn kernels, fresh or frozen
- 2 tablespoons butter
- 1 whole jalapeno pepper, diced
- 2 tablespoons mayonnaise
- 1 pinch cayenne pepper
- ⅕ teaspoon chili powder
- ½ teaspoon salt
- 2 tablespoons white vinegar
- 1 8-oz container feta
- 1 whole lime, cut into wedges
- 1 8-oz bag baby spinach
Instructions

Add corn kernels and salt. Sauté for 4 minutes, then remove from heat and cool.

Add cooled corn to meal prep container. Mix in mayonnaise, cayenne pepper, chili powder, and white vinegar until mixed thoroughly.

Before serving, add the queso fresco and fresh lime juice.

Lay a bed of spinach in your serving container.
