A creative casserole with spiralized sweet potatoes, brown rice, and Mexican-inspired flavors.

- 2 whole sweet potatoes, peeled & spiralized
- 2 cups brown rice, dry
- 6 cups vegetable broth
- 2 cans crushed tomatoes, 15oz
- 2 tablespoons chili powder
- 4 teaspoons ground cumin
- 2 teaspoons dried oregano
- 2 teaspoons salt
- 1 teaspoons ground black pepper
- 3 cups black beans, cooked
- 16 oz corn, frozen or canned
- 2 whole bell peppers, diced
- 1 whole onion, diced
- 1 cup mozzarella cheese, shredded
- 1 bunch cilantro
Instructions

Preheat oven to 400 degrees F.

Add sweet potatoes & brown rice to bottom of casserole dish(es). Mix to combine.

In a large bowl, combine broth, tomatoes, and spices. Mix in beans, corn, bell peppers, and onions.

Pour the contents of the bowl over the sweet potato and rice.

Cover the casserole dish tightly and bake for 40-45 mins until sweet potato is tender.

Sprinkle cheese on top then bake uncovered for an additional 5 mins.

Serve topped with cilantro.
